Crock Pot Sweet Pork

Yield: Serves 25  Prep time: 10 min   Cook time: 7 hours

Ingredients

3-4 pound pork roast

2 t adobo sauce (from can of Chipotle Peppers if can’t find)

1-½ t salt

1 t garlic, minced (2 cloves)

½ t cumin

½ t ground mustard (dry)

½ cup brown sugar

¼ cup white sugar

½ cup mild green enchilada sauce

1 cup Coke or root beer

Additional ½-1 cup brown sugar

Directions

Place pork roast in crock pot.  Sprinkle on all seasonings and sugar. Pour enchilada sauce and Coke over everything.

Cook on LOW for 10-12 hours or HIGH for 5-6 hours. After the allotted time, remove bones and using two forks, gently pull and shred the pork. If it will not shred easily, it needs to be cooked longer.

Try not to shred the pork to tiny pieces because it will get mushy. Just shred into chunks and then ADD ½-1 cup brown sugar, depending on taste. Stir and cover with lid. Cook for an additional 30 minutes. Serve.

Notes

I’ve doubled this.  Used 2 pork butt/shoulder roasts (~8# total) doubled most stuff, not quite on adobo.  Use less cumin (original recipe calls for 1 tsp with 3-4# roast) used 12 oz can coke & ~6 oz root beer. Cooked 8:25-4:30.  Shredded pork, removed bones, reserved juices.  Put pork back in & added maybe ½ of juices back (ladle by ladle until juicy but not sloppy.) Added ~2/3 cup brown sugar.  Can serve on buns or with tortillas to make burritos (add toppings like grilled onions, black beans, cheese, sour cream, guacamole, salsa, etc.)
